The arabic style of life. A few years back, my Girlfriend introduced me to this device.

It's sort of like a bong or pipe. The initial idea is to place the tabacco in the top bowl. Use something like foil to wrap on top and then place some nice hot coals to begin a session. The idea is "baking" the tobacco and not burning it.
People usually use "Shisha" tabacco to smoke in hookahs. The main reason IMO would be because of the glycerin use in Shisha. If you place a dried tobacco and some coals on top....OOOOOO baby would it burn and definately kill your throat. The glycerin in Shisha is usually defined well. So when you place those hot coals...you'll bake the shisha and wont burn it. Sometimes certain brands of shisha can seem dried. Thus people would mix their shisha with something like Honey.
