I haven't watched much anime, outside of some stuff i've watched on Adult Swim (FLCL, NGE, and Paranoia Agent)
I was wondering if anyone would name a couple really good series that any anime fan should watch (if there even is such a thing)
i'm open minded, so don't feel that you have to name something that matches the style from the little i've seen, nor would i be opposed to a lot of filler, as long as it's entertaining.

That all depends on what prefrence u like.
Drama, Mecha, School Life, Ecchi, Action, Fantasy, etc...
Every1 has different points of view when it comes to Anime styles. and there isn't one definate answer that every1 can agree on at the same time.

hmm i hoped that wasn't the case.
I'll try any anime at this point. I guess what i was hoping for was for people to post a couple series they love and want others to see
From what i've seen:
i liked the school life of NGE (i think that the spoof near the end, Girlfriend of Steel [right?], and could have been a great show)
comedy and action are always good
I'd prefer something with a plot (plus or minus the ability to grasp it >_>)
scantily clad women are always a plus
drawing style (if that's what you meant) isn't really an issue if i can see what's going on

DearS seems to fulfill the requirements.
Be forewarned though, the plot isn't the deepest, but the characters are developed very well.

These dont really fit the category you described, but trying new things can be nice too
A few animes that have an execellent plot are
Code Geass
Higurashi no naka koro ni
Fate/stay night
Darker than black
Mai HiMe
Mai Otome
Tsubasa Chronicle
and a few others that are an entertaining watch such as
Full Metal Alchemist
Full Metal Panic
Gundam SEED
they are just a few of the brilliant animes available :D

I guess I would go for School Rumble and Code Geass, I will guarantee that these two will be an enjoyable one(LoveComedy and Mecha)

Melancholy of Haruhi Suzumiya - I recommend it for comedy
Kanon(remake) - Comedy with a very good story
Love Hina - romance comedy harem.
He is my Master - Comedy with a bit of ecchi
School Days - ...
Onegai Teacher
Persona Trinity - Soul
Myself, Yourself
Goshuushou-sama Ninomiya-kun
All of the Da capo series
All of this except for Persona are Comedy. I know many more but this is the only ones I can remember right now. Anyway I hope find the animes you like

Well if you like hand to hand combat type of violence and exploding clothes then Tenjho Tenge and Ikkitousen are OK. I personally prefer the art of Tenjho Tenge more, plus it also has more comedy.

Well I'm not sure if these will fit in exactly to what you're looking for but Tsukihime is pretty good. FMA, utawarerumono and X TV kinda fit into what you're looking for too but not really.
