Take a Look at Fullmetal Alchemist its a very good and well rounded Anime I think you will like

Well I'm not sure if these will fit in exactly to what you're looking for but Tsukihime is pretty good. FMA, utawarerumono and X TV kinda fit into what you're looking for too but not really.
